The version worth paying for is an outlet box in the wall
The best answer is a recessed ice maker outlet box cut into the wall behind the refrigerator, fed with half inch PEX, with a short braided hose from the box to the appliance. Tradespeople describe this as overkill for an ice maker and not overkill for the house, which is the right way to think about it. The box gives a proper valve at the point of use, keeps the connection visible and serviceable, removes the long small-bore run entirely, and means the refrigerator can be pulled out without a length of tubing being dragged around behind it. If the wall is open for any other reason, this is the moment.
Use tubing that survives being behind a refrigerator
Quarter inch PEX is a good answer for the run: flexible, tolerant of some freeze expansion, and it does not corrode. Copper is used and works, and it leaks where it has been crimped, which is easy to do while feeding it through a cabinet. The poly tubing that ships in cheap kits is the weakest of the three. Whatever you use, cut it with a tube cutter and get a clean perpendicular cut, because a saw leaves burrs and burrs cause leaks at compression fittings. Make sure everything in the path is rated for potable water.
Leave a service loop, or the connection pays for the fridge being moved
Leave roughly a foot of slack in the tubing behind the appliance. Refrigerators get pulled out to clean behind them, to chase a dropped thing, or to be replaced, and every one of those movements pulls on the connection if the line is tight. A stressed compression fitting behind a refrigerator is the definition of a leak nobody sees. Coil the extra neatly rather than leaving it looped where a caster will run over it, and make sure the loop is behind the appliance rather than under it.
Do not overtighten, and test before it goes back against the wall
Brass angle stops crack if you crank on them, and strong resistance before the fitting fully seats usually means cross-threading rather than a need for more force. Back off and check. Then pressure test before anything is closed up: put a bucket under the joint when you re-pressurize, and check every connection with the refrigerator still pulled out and the cabinet still open. Testing after the appliance has been pushed back is testing the one configuration where you cannot see or reach anything. Come back the next day and check again, because a weep takes time to show.
